About this recipe

Adyghe cheese is a soft, fresh cheese from the North Caucasus. Unlike mozzarella, it is not stretched: hot milk is curdled with acid, and the separated curds are placed in a mould to drain. This recipe shows how to make Adyghe cheese at home without any rennet, which makes it an easy introduction to cheesemaking. Slice it for breakfast or serve it with vegetables.

What the guide covers

The recipe covers heating the milk, separating the curds from the whey, draining, turning and letting the cheese press under its own weight. Pay close attention to the type and strength of the acid: vinegars of different strengths cannot be swapped one for one. Take care around the hot milk and whey.
